Quesabirria Tacos

Ingredients:

2 lbs beef chicken roast or breast, cut into 1-inch cubes
1 white onion, roughly chopped
5 cloves of garlic
2 bay leaves
1 tablespoon cumin
1 tablespoon of thyme
1 tablespoon chili powder
1 cinnamon stick
Salt and pepper to taste
Beef broth or water

Instructions:

Season the veal cubes with salt, pepper, cumin, thyme, pepper, garlic, onion and bay leaf. Add enough beef broth or water to cover the meat.
Bring to a boil, then reduce heat and simmer for 2-3 hours until the beef is tender.
Remove the meat from the liquid and shred it with two forks. Liquid reserve.
Dip tortillas in hot beef liquid to soften. Top with shredded beef and other desired taco toppings.
Optionally, dip assembled tacos in beef broth before serving for extra flavor.
