4 Ounces Cream Cheese, softened at room temperature
1/4 Cup Ranch Dressing
2 tablespoons dill
3-4 Long Cucumbers. skinned and sliced into thirty 1-inch slices
15 cherry tomatoes, halved
Additional Salt Sprinkle
Additional Seasoning Sprinkle for Garnish
Additional Red Pepper Sprinkle for Garnish
Instructions:
1) First, prepare the HERB CREAM CHEESE, in a stand mixer mix the softened Cream Cheese with the Ranch dressing and herbs. Mix until well combined. Pour with a spoon into a piping bag with a star tip.
2) Prepare the cucumber, remove the skin and score the edges using a fork. Slice into 1-inch pieces. Using a melon Baller, remove part of the middle of one side of the cucumber piece, leaving a half-moon-shaped crater.
3) Pipe Herb Cream Cheese into the crater. Enough to stick out about 1/2 inch from the top.
4) Add half a Cherry Tomato partially buried in Herb Cream Cheese
5) Sprinkle with additional salt, herbs and spice mix for additional color. Chill in the refrigerator until ready to serve.
6) Serve chilled and ENJOY!
